Epis: Haïtian Seasoning Mix

This aromatic and flavorful seasoning mix is used in almost all Haïtian cooking. Its great to marinate meat, fish, vegetables, and even add to rice. Many recipes will call for epis as part of their ingredient list.

Equipment

  • Blender or Food Processor

Ingredients
  

  • 1 small Onion
  • ½ Green Bell Pepper
  • ½ Red Bell Pepper
  • 15 sprigs Thyme (leave stem on)
  • 5 Whole Cloves
  • 4 cloves Garlic
  • 8 Scallions (roughly chopped)
  • 1 bunch Parsley (roughly chopped)
  • ½ cup Olive Oil/Canola
  • ¼ cup White Vinegar

Optional

  • 2 cubes Maggie (or other bouillion cubes)
  • 1 Habanero Pepper

Instructions
 

  • Add all ingredients to blender. Puree until mixture resembles pesto.

Notes

Keep in refrigerator for up to 3 months. The acid in the vinegar will keep it from spoiling.
Keep in freezer for 4+ months.
